Relaxing On Hump Day
The last week and a half of work has taken its toll. Students are dropping to the flu. I have held strong, but I am weary. At the end of Monday, it felt like Friday. I can see the end. Despite having a little to do, I have been able to enjoy this Wednesday evening.
And why not? The world champion Philadelphia Phillies opened this year’s World Series with a dominating win over the Yankees. Chase Utley clocked two homers and Cliff Lee pitched a brilliant complete game. All the while I smoked a brisket.
The other day I pulled out some hamburger from the freezer. We are working on eating down our stash of food. Yesterday I began prepping the burgers for the grill. When I opened the package, I quickly realized I didn’t have hamburger. It was not immediately known what cut of meat I had. There was a second package that did have the hamburger, so dinner was fine. I kept thinking about what this other piece of meat was and then it dawned on me what it was (yes, I should have marked it). I cooked a brisket about a month ago. trying something different, I cut the point off the brisket and saved it. This is the point. The point is what burnt ends are made from.
So while the Phillies were taking care of the Yankees, the WSM smoked the brisket. I pulled it, cut it, added the No. 5 sauce, and placed back onto the smoker. I should have some brisket candy sometime after midnight. Hump day should not drag one down.
